Shrimp with Garlic & Cilantro: Super Duper Easy!

Need to get dinner on the table in a hurry? At the end of the day, spending a lot of time cooking isn’t my idea of fun. I want to get in, get out, and get on with it. I want something easy to prepare that’s delicious. This recipe for shrimp with garlic and cilantro is just right.

Shrimp with Garlic and Cilantro

So here’s a little secret. Jungle Jim is not wild about fish. I can get him to eat it occasionally, but it’s under duress. However, he LOVES shrimp so all is not lost. This simple dish is one I threw together one evening. I had cilantro that I needed to use before it went bad (we love cilantro) and we wanted something light and not too heavy for dinner.

Recipe for Shrimp with Garlic & Cilantro

Shrimp with Garlic & Cilantro

Ingredients

  • 1 pound shrimp pre-cooked
  • 1 bunch cilantro chopped
  • 3 cloves garlic minced
  • 1 small bunch green onions chopped
  • 1/4 to 1/2 cup lime juice
  • salt and pepper to taste

Instructions

  1. Thaw shrimp if you're using frozen.

  2. Saute shrimp in lime juice till cooked.

  3. Add garlic and green onions and saute approximately 2 minutes.

  4. Add cilantro and saute till wilted.

  5. Add salt and pepper to taste.


I served the shrimp over a bed of rice with peas. However, it would be good served over brown rice or noodles. If I was serving it over noodles I’d add a little butter to the lime juice when I cooked the shrimp and then be sure to add butter to the cooked noodles. Butter does make everything taste better!
